The following recipe came out of a booklet entitled: Oregon Prunes for Health (2008.018.0010) that we came across in the archives today. Published by the Pheasant, Hunter, Beaver and Monogram brands, they caution that: “The particular consumer should always purchase prunes in original, unbroken packages which insures absolute cleanliness, and they can be kept in the ordinary pantry indefinitely. A handful of uncooked prunes in the children’s lunch box will be greatly appreciated and furnishes a healthful diet…”
A Delicious Prune Cake
Take a cupful of Pheasant Brand prunes, stew them until they are very tender and remove the pits; then, after the liquid has been cooked into the fruit, take 1 cup of sugar, 2-3 cup butter, the yolks of 3 eggs and add the prunes. Then take 1 teaspoon each of ground nutmeg, allspice, and cinnamon, 3 teaspoons sour cream or milk, 1 2-3 cups flour, 1-3 teaspoon soda, 2 level teaspoons baking powder, and flavor to taste with vanilla. Bake in layers and put together with boiled frosting.
